
The first time we saw our property was September of 2003, and we were struck, not only by the beauty of the surrounding area, but by how beautiful the walnut trees looked on the hillside. The trees are north of 50 years old, some maybe as old as 75 years. They are sculpturally dramatic all year round, especially in the winter. There's something very zen about the way the sun filters through the dormant branches and casts shadows on the green hillsides, and it was hard to remove those that we did.
Normally, the walnuts get harvested around the end of October, and are sold off to wholesalers of nuts. We'll continue to do that with the bulk of the nuts, but we feel compelled to experiment with other alternatives. Our first project will be to make an Eau de Noix (Walnut liqueur). We'll keep you posted on our progress.
