Our only white blend, the name is Finnish and means “light, fair, bright, blond”.
This blend always consists of viognier, roussanne, and grenache blanc. Until 2012, this blend has been a product of purchased fruit from Derby and Alta Colina. We planted our whites on our estate in 2012, and the 2015 vintage is the first all estate white. There were only tiny amounts of fruit, though, so this vintage is predominantly Grenache Blanc with a minority of Roussanne.
We look to pick our white varietals earlier than most wineries, typically around 22.5-23.5 brix. We ferment slowly over a month or more in steel tanks, and don’t allow the wine to go through malolactic fermentation. The varietals are blended shortly after fermentation, fined, filtered, and stay in the steel tanks till bottling in mid February. The resulting wine is dry, high in acidity, crisp, and fruit forward.
